Chef Scott Xu of Guangzhou heads the kitchen at this stylish Cantonese eatery, where, depending on the weather, dishes feature seasonal ingredients designed to promote good health. Take the richly nuanced chef's soup, for example. Based on the principles of yin and yang, it comes in two versions, one with seahorse, which is good for men; and the other with fish maw, for women. Other health-promoting ingredients in the soup include abalone, mingmu fish, medlar and mountain mineral water. Starters range from crunchy deep-fried eel served in sesame and sugar, to spare ribs deep-fried in a honey and garlic sauce - beautifully served in a bell pepper. For mains, you can't beat the wok-fried goose liver, shelled shrimps and chive flowers. The crispy roast chicken here is exceptionally tender, and the lemon and pepper dipping sauce adds an undeniable kick. Don't forget the stewed winter melon with assorted fungus, dried oysters and ginko. Finish off with the braised whole tomato stuffed with mixed cereal that's velvety, pungent and nutritious. The snow lotus puff pastry served in a coconut shell is rich, while the complexion-improving hashima is served in a double-boiled papaya with a sweet syrup and coconut milk on the side. Michael Taylor
