One of the hottest Chinese restaurants in town, The Chairman is known for using classic ingredients and flavours but in innovative and exquisite ways.

A good example is the king prawn cooked in fish and rice broth – where the al dente prawns swim in a rich, fragrant and smooth liquid – an exceptional dish through and through.

Other signatures include steamed fresh flowery crab with aged Shaoxing wine, fragrant chicken oil and flat rice noodles, and pork belly slow-cooked in preserved vegetables with Chinese buns, which is a classic homestyle dish that is made here with superior produce and elevated to a fine dining experience.
