Hong Kong composer Charles Kwong is artist associate at the Hong Kong Sinfonietta. He has a new work for ensemble that will have its world premiere at the Lucerne Forward Festival in Switzerland on November 20. He spoke to Andrew Sun.

My wife is vegan so for many years we’ve explored mostly vegetarian restaurants. For a few years now, I’ve stopped eating beef and pork, maybe chicken occasionally. I’m mostly a pescatarian.

If I crave a burger, I’ll even eat an Impossible burger, which is not bad. I can get them at Triple-O’s (various locations including Shop 121, Harbour Centre, 25 Harbour Road, Wan Chai. Tel: 2519 3000) and they’re quite good.

A strictly vegetarian restaurant that I like a lot is Isoya Japanese Vegetarian Restaurant (9/F, Wan Chai Road, Wan Chai. Tel: 5500 8812). They use really fresh ingredients.

The vegetarian sushi is really flavourful, not like the awful stuff from when I was in school. It’s also not mock meat sushi or substituting tofu in meat type dishes. It’s much more imaginative.

This is one of my and my wife’s favourite places. We even had them cater our wedding dinner.
